Irn bru sgroppino

ingredients
- 25ml Height of Arrows Funk
- 1 scoop of Irn Bru sorbet (from S.Luca or homemade)
- 50ml Prosecco or Cava
method
Pour the gin in to a stemmed glass. Scoop in your sorbet and top with the fizzy wine. Garnish with a twist of lemon.
homemade irn bru sorbet
- 150g white sugar
- 750ml bottle of Irn Bru 1901
- 1 tbsp of Lemon Juice
- Orange food dye (optional)
method
Pour the Irn Bru and sugar into a saucepan and simmer gently until the sugar has dissolved and the Irn Bru has reduced slightly. Take off the heat and add the lemon juice and food dye if using.
Once cooled pour into a shallow tub and place in the freezer.
Stir and break up the ice crystals with a fork every half hour for about four hours.
