Pour the gin in to a stemmed glass. Scoop in your sorbet and top with the fizzy wine. Garnish with a twist of lemon.

  1. Pour the Irn Bru and sugar into a saucepan and simmer gently until the sugar has dissolved and the Irn Bru has reduced slightly. Take off the heat and add the lemon juice and food dye if using.

  2. Once cooled pour into a shallow tub and place in the freezer.

  3. Stir and break up the ice crystals with a fork every half hour for about four hours.
